

The Kitchen
This is one of the most simple and beautiful aspects of what we do. We blend fresh and as-much-as-we-can-get local ingredients into a variety of different concoctions and emulsions. Once we've achieved a flavor that we're jazzed about, we'll pour the blend into our Brazilian-made picolé molds. From there we set the molds down into our proprietary flash-freezer which can bring a batch of 25 pops down to hard-freeze in under 20 minutes. Flash-freezing is much of what is responsible for achieving smooth, soft textures in what would otherwise be hard, frozen fruit.
